250 g Rice/quinoa sachet or 2 sourdough bread slices
1 Avocado sliced
100 g Wild rocket/baby spinach
2 tbsp Sesame seeds
Method
Boil water in a pot once boiling add 2 eggs and boil for 2 min. Place eggs in a bowl filled with cold water and set aside. Remove shell after 2 minutes.
Heat up rice sachet in microwave or toast sourdough bread.
Slice avocado and assemble bowl as follow: Rice/toasted sourdough, avocado, spinach, salmon and soft-boiled egg topped with sesame seeds.
Notes
Season food with lemon, olive oil, 2tsp coconut sugar, salt and pepper and fresh dill (optional).
